BEBINCA 


Hello! Welcome back to another culinary adventure with Viana D'Silva! Today I'm going to share one of my favorite sweet dish which is known as "BEBINCA"

Bebinca is a traditional layered cake of Goa. Bebinca was first made by a nun called Bibiana in the Convent of Santa Monica in Old Goa, who baked layers to symbolize the seven hills of Lisbon and the Old City Of Goa. Bebinca is a type of pudding traditionally made of 16 layers. It is baked using ingredients that are typically incorporated in Indian cooking, such as ghee and coconut milk.

Bebinca is popular during Christmas and other festive occasions. Preparing Bebinca is a slow process. The batter is made with flour, egg yolk, ghee, sugar, and coconut milk. The batter is spread thinly onto a grill and the layers are stacked on top of the another. Bebinca is garnished with nutmeg.





       INGREDIENTS:

  • 250ml Thick coconut milk
  • 400gms Sugar
  • 150gms Refined Flour (maida)
  • 9 egg yolks
  • 1tsp nutmeg powder
  • 1/2tsp cardamom powder
  • 5tbsp Ghee
  • Pich of Salt
  • 1tbsp Sugar

       METHOD:
  1. To prepare bebinca take the thick coconut milk and add sugar and dissolve nicely.
  2. Take the egg yolks and beat them lightly and add them to the coconut milk and sugar mixture and whisk it to a smooth texture.
  3. Now add the refined flour, nutmeg powder, cardamom powder, and salt and then add this to the coconut milk, sugar and egg yolk mixture without any lumps. Strain the mixture to get a smooth batter.
  4. Divide the batter into 2 equal parts and then bake this batter into layers. Preheat the oven to 180degree C.
  5. For sugar, caramel take 1 tbsp sugar and burn it on low fire, and add 2tbsp of water stirring and let it cool down and then add the caramel into the batter portion for the brown color.
  6. Take a round baking tray with a deep height, heat it, and then put 2-3tbsp ghee and nicely spread it all over.
  7. Add half cup dark color batter and bake for 15minutes, then apply little ghee on the baked layer.
  8. Then add half a cup of light-color batter on the baked layer with ghee and bake for another 15 minutes.
  9. Repeat this adding light and dark batter alternatively and baking till the batter is consumed.
  10. Let it cool down naturally and remove on a big wide plate.
  11. Serve the Bebinca into slices with a scoop of ice cream
