CHICKEN CAFREAL


 The cuisine of Goan people  is mostly sea-based foods, the staple food is rice and fish. The food of Goan Christians is heavily influenced by the Portuguese(the use of vinegar, is very prominent).Goan Catholic Cuisine in Goa is a fusion of Goan Hindu and Portuguese cooking styles. Vinegar (made from toddy of local coconut trees) is used to give the zingy taste to the meat dishes.

 The word "CAFREAL" is a spicy chicken prepartion consumed widely in the Indian State of Goa. The prepartion originated from the Portuguese colonies in the African Continent. It was introduced into the Goan cuisine by the Portuguese and the African soldiers serving under the Portuguese.

Chicken Cafreal is always made from whole chicken legs, flavoured with the spices and herbs mentioned and then shallow fried. Chicken Cafreal is usually accompained by potato wedges and lime wedges. Chicken Cafreal is an African recipe gifted to Goa by the Portuguese. The main component of Chicken Cafreal is the chicken and the green spices.






      INGREDIENTS:

      Marinade

  • 2 cups coriander leaves with their stalk
  • 12 green chillies
  • 1 inch cinnamom stick
  • 1tbsp black peppercorn
  • 1/2 tsp cloves
  • 1 bay leaf
  • 1 tsp cumin seeds
  • Juice of 2 lemons
  • Ginger 2 inch
  • 8-10 cloves of garlic
  • 1kg Chicken
  • 1tbsp turmeric powder
  • Salt as required
  • 4tbsp oil
  • 2 large potatoes
  • 2tbsp oil
     Garnish

  • Lemon slices    

      METHOD:
  1. Grind coriander leaves, ginger, garlic, cumin seeds, black peppercorns, bay leaf, cinnamon, cloves, green chillies and lemon juice in a mixer. Grind it into a fine paste.
  2. Add salt and turmeric powder to the chicken along with the green spice mix.
  3. Mix it well and make sure you coat the chicken well with the spice mix.
  4. Marinate the chicken for a minimum of 20 minutes.
  5. Heat oil in a pan and place the chicken pieces
  6. Use the spice mix water and add it to the chicken. Cover the pan and cook it for 15 minutes.
  7. In another pan, heat oil to cook the sliced potatoes.
  8. Add salt to the potatoes and cook them well. Also, keep turning the chicken pieces so as to cook it from all sides.
  9. Let the potatoes get golden brown color on both sides.
  10. Serve this authentic Chicken Cafreal Hot .
